Creamy Dreamy Chicken Penne... (You Know You Want It)

- 2 boneless skinless, chicken breast - cut into bite size/qtrs
- 1# penne - cooked al dente
- 3-4c Fresh Spinach
- 5z or ½ container of cherry tomatoes halved
- 6-8 whole portobello mushroom (baby bellas), sliced
- ½ large red onion diced
- 2T Spicy Rack’s Cock-a-Doodle Drool seasoning
- 4 cloves garlic, minced
- ½c white cooking wine
- 2T unsalted butter
- 4T olive oil
- 1T pesto
- 1 jar Alfredo Sauce
- Heat 2T olive oil in a large skillet over med-high heat.
- Season the chicken with Spicy Rack’s Cock-a-Doodle Drool Seasoning and add to pre-heated skillet. Cook until browned
- Remove chicken from skillet and scrape up any browned bits and set aside.
- Add butter and remaining 2T of olive oil to skillet. Heat until butter is melted
- Add minced garlic cook for 1 minute or until fragrant and add cooking wine. Continue to heat for 3 minutes
- Add onions and mushrooms to skillet and cook until tender about 6-7 minutes.
- Add tomatoes and stir to combine.
- Add spinach to skillet, cover and cook for 5 minutes.
- Add cooked chicken, alfredo sauce, and penne. Top with pesto, mix and serve.
